2020 Easter Anguston Farm harvest

Strawberry, Vanilla and Lime Jam

2 x 900g punnets of strawberries, washed and hulled (approx 1.7kg)

Juice of 2 limes

2 tsp vanilla paste or essence (adjust to taste)

1.7kg of preserving sugar with pectin added

OR

​

Strawberry, Black Pepper and Balsamic Jam

​

2 x 900g punnets of strawberries washed and hulled (approx 1.7kg)

1.7kg preserving sugar with pectin added

4 tblsp balsamic vinegar

1/4 tsp freshly ground black pepper

Method

​

Combine all of the above ingredients of your chosen jam in a large pan and start to heat, mixing occasionally

Bring the mixture to a rolling boil (102 degrees C) for 15 minutes

Meanwhile, thoroughly wash 8 jam jars then sterilize them in a hot oven.  Leave them to cool a little before filling

Fill the jars, label and enjoy!
